Kattuyanam Rice Kanji
Best Suitable For:
A nourishing and comforting traditional meal, especially for breakfast or a light dinner. It is also well-suited for hot summer days, when served with buttermilk, as a simple and refreshing meal.
Ingredients:
- 1 cup Kattuyanam Rice
- 5–6 cups Water
- ½ cup Buttermilk or fresh curd
- Salt to taste
- 1 small shallot, finely chopped (optional)
- A few curry leaves (optional)
Method:
- Wash the Kattuyanam Rice thoroughly and soak it for 6–8 hours or overnight.
- Add the soaked rice and water to a pressure cooker and cook until the rice becomes very soft and porridge-like. About 7-8 whistles.
- Allow it to cool slightly and gently mash the cooked rice.
- Add salt and mix well.
- Once cooled, add buttermilk or whisked curd and mix to your preferred consistency.
- Garnish with chopped shallots and curry leaves, if desired.
Serving suggestion: Serve Kattuyanam Rice Kanji with a side of pickle, small onions, or a simple
vegetable stir-fry for a wholesome traditional meal.
